This is one of my favorite ways to bake – just mix wet and dry ingredients together in a bowl, get the batter into a pan, and into the oven it goes.
These muffins have a bit of jam in the middle, for a take on the classic peanut butter and jelly sandwiches.They aren’t overly peanut buttery (although still a bit more than I care for). I used blueberry jam, but the beauty of these is that you can use whatever jam strikes your fancy – or, you can even use several different types so you have a variety.
I think the best part of the muffins is the crumb topping – it’s big and chunky and just the right level of sweetness. People at work seemed to like them, not love, but like. Larry felt the same way. They make a nice snack.
