This is a quick, delicious puffy pancake that can be mostly prepped ahead of time. I had my milk and eggs sitting out at room temp and flour weighed out, so it was just 25 minutes after I started to a delicious dessert. Or breakfast. Or mid-day snack, which is when we had it.
Lightly caramelized bananas and chocolate chunks make up the filling, but it’s a pretty flexible recipe and would even be delicious without any fillings. We added a drizzle of Bourbon barrel aged maple syrup. I’d like it with honey as well, although I pretty much like anything with honey.
