This is it – the last recipe to be baked out of Baked Occasions. This is the third book we’ve finished…. and I’ve made every single recipe from all books. Whew! Not always on time, not always perfectly, but that’s in the spirit of our group – we’re casual and scrappy and we all love to bake, not follow rules.
I kind of love that these simple little meringues are the last recipe. We don’t need a big hurrah. To me, they represent the book perfectly. Light, satisfying, familiar yet different.
Meringues are super simple to make, too – just whip up egg whites with some sugar and flavoring (peppermint and mini chocolate chips here), and dry them in a low oven for a couple of hours.
I haven’t been able to stop eating these. I like the light touch with the peppermint. It’s not overwhelming, and it plays nicely with the chocolate.
